Saffron Foam
1-1/2 cup of heavy cream
1/2 cup half & half
2tps Saffron threads
6 ounces of white wine
2 sheets of gelatin
Salt and pepper to taste
Combine white wine and saffron into saucepan and bring to simmer. Add heavy creamand half & half. Bloom gelatinin cold water, remove excess and add to mixture, season to taste, strain, add to whipper.
